What is a holiday without the food? Family members young and old gather during the Lunar New Year to share big feasts — most of which include a key dish: dumplings, or Jiaozi.

HOMEMADE DUMPLING SKIN
All purpose flour 3 CUPS (Need more for dusting)
210ml of water, give/take
Salt, ½ teaspoon

PORK AND CHIVES DUMPLING FILLING
Minced Pork 2LBS
Chinese Chives 4 tablespoons, finely chopped
Chinese Bok Choy ½ cup, finely chopped
Chinese celery 4 tablespoons, finely chopped
Minced Garlic, 2 teaspoons
Sesame oil, 3 tablespoons
Soy sauce, 4 tablespoons
Sugar to taste

FOR FRYING – Vegetable oil
FOR BOILING – Water
